Guisadong Ampalaya
Ampalaya just got healthier. For this recipe, you’ll combine this nutritious melon with egg in a stir fry making it one of the healthiest recipes listed. Serves 4 to 6.


  • 2 pieces ampalaya, cleaned and cut into thin slices
  • 1 tablespoon garlic, minced
  • ½ teaspoon ground black pepper
  • 2 tablespoons salt
  • 2 eggs
  • 18 oz water
  • 1 large tomato, sliced
  • 1 large onion, sliced
  • 3 tablespoons cooking oil

Cooking Directions

  1. Boil or heat water in the microwave until lukewarm. This is going to make a nice salt water soak for the ampalaya. In a large bowl, combine the luke warm water, salt and ampalaya. Let soak for 5 minutes. Set aside.
  2. In a small bowl, beat eggs together. Set aside.
  3. In a cheese cloth, place the soaked ampalaya and squeeze tightly until all the water drips out.
  4. In a large skillet, heat oil. Sautee the garlic then the onion then the tomato. Once the garlic has browned and the tomato wilted, stir in the ampalaya. Salt and pepper, to taste. Slide the ingredients to the corners of the pan and cook eggs in the center of the skillet. Mix everything together and serve hot.
