Filipinos have always had a sweet tooth, it can be seen in most desserts that we have as a culture and one really good example of this are the yema balls or custard balls. It is a traditional Filipino dessert that everyone loves. Its sweet sticky gooey goodness makes for a dessert that can be enjoyed with friends or on your own. It's also really simple to make and it requires a few ingredients and a bit of time to cook.

The Ingredients

1 - Can Condensed Milk
2 Tablespoons Butter
4 Egg Yolks
2 Tablespoons white sugar

The Mixture

First, combine the can of condensed milk with the four egg yolks in a bowl. Mix the two ingredients well and then pour it into a double boiler. If you don't have a double boiler you can also use a small pan and place it inside a bigger pan that has boiling water.

Stir the mixture continuously and ensure that you're cooking it over medium to high heat. Now it may take a while, but you'll know when the mixture is when it's thick and it separates from the pan. Another way of checking when the mixture is cooked just right is to use a spoon, dip it in the mixture and bring it up. The mixture should stick to the spoon and should not drip off it. Add the two tablespoons of butter in the mixture; this will make the yema softer and yummier. Set aside the mixture for about thirty minutes and allow it to cool.

The Coat

Now the yema is ready for coating, put two tablespoons of white sugar on a plate. Coat your fingertips with a bit of butter as you don't want the yema mixture sticking to your fingers while you coat it. Get a teaspoon of yema mixture, though it depends on how big you want the balls to be, drop it on top of the sugar using another teaspoon. Roll it around the white sugar creating your yema balls, don't worry though, they don't have to be perfectly round to be tasty.

Once you're done coating the yema with white sugar you can store them in the fridge or wrap them in squares of colorful cellophane plastic.

But don't stop there, other ingredients can be added to the mixture to make it interesting. Optional ingredients can be a dash of rum, some peanut bits, or even dried fruit. It depends on what ingredients interest you and your tastebuds.
