Who doesn't love to make pizza?  Today I stumbled across several recipes for Pinoy Pizza, Filipino (Sweet) Pizza Sauce and Pinoy toppings...any my mouth began to water.  What is different here is the tomato sauce includes some banana ketchup (making it sweet) and the toppings include eggs (making it hearty).  Here we go.

 

Pizza Dough

  • 1 teaspoon active dry yeast

  • pinch of sugar

  • 2/3 cup warm water

  • 2 cups all purpose flour

  • 1 teaspoon sea salt

  • 1 tablespoon olive oil


In a bowl, combine the yeast, sugar and water.  When little bubbles form add the flour, salt and oil.  Mix until smooth.  Then kneed until dough is smooth and elastic (for about 10 minutes).  Plop it into a clean, oiled bowl and wait for it to double in size.  This is your pizza dough.

Pizza Sauce

  • 8 ripe tomatoes

  • salt, pepper

  • thyme and rosemary

  • 2 tablespoons olive oil

  • 1 clove garlic

  • some banana ketchup


Drop your tomatoes in boiling water, and take them out after 3 minutes.  Wash and remove their skin.  Quarter each tomato and take out their seeds.  Throw all ingredients into a blender and blend until move.  This is your pizza sauce.

Pizza Toppings

  • 4 pieces of longganisa or chorizo de bilbao

  • your crust

  • your sauce

  • 1 cup (eyeball it) of shredded mozzarella cheese

  • 12-15 quail eggs

  • 1 large onion, cut into rings

  • salt, pepper

  • 1 tablespoon of cornmeal or breadcrumbs


Preheat oven to 500 degrees (or highest setting).  While you're waiting for the oven to heat up, cut the longganisa into small bits and pan fry until slightly brown.  Set on a plate to cool.

In a pizza pan, sprinkle cornmeal or breadcrumbs.  Lay the pizza dough on top and stretch to the edges of the pan.  Spread your tomato sauce over the dough.  Sprinkle half of your cheese on top of your tomato sauce, then put your longganisa (or chorizo) on top of the cheese.  Place cracked quail eggs on top of the meat, then the onion rings on top of your eggs.  Sprinkle the remaining cheese on top of everything and bake for 10 minutes, or until the crust has browned.  Slice and serve hot.
