WONTON SOUP (PANCIT MOLO)

Ingredients:

  1. 1/2 lb (225 g) ground pork
  2. 2 tsp. peeled and minced fresh ginger
  3. 1 green onion (scallion), finely chopped
  4. 1 tbsp. soy sauce
  5. 1 tsp. freshy ground black pepper
  6. 1 package round wonton wrappers
  7. 1 large egg, beaten
  8. 4 cups (1 liter) chicken stock
  9. one 1-in piece fresh ginger, peeled
  10. one 1-in piece lemon-grass
  11. 2 tbsp fish sauce
  12. 1/4 lb (125 g) watercress washed with woody stems removed

 

Cooking Directions:

In a large bowl combine the pork, ginger, scallions, soy sauce and black pepper. Mix thoroughly. Place a teaspoon of this meat filling in the center of each wonton wrapper and fold the top half over (forming a half moon) with the meat in the middle.

In a large pot combine chicken stock, ginger, lemon grass and patis; simmer over medium-low heat for 15-20 minutes.

Remove from heat and discard the ginger and lemon grass. Add 12 to 15 wontons to the soup and simmer until wontons are cooked, about 5-6 minutes. Serve warm and grab a spoon.
