In a large bowl combine the pork, ginger, scallions, soy sauce and black pepper. Mix thoroughly. Place a teaspoon of this meat filling in the center of each wonton wrapper and fold the top half over (forming a half moon) with the meat in the middle.
Ingredients:
- 1/2 lb (225 g) ground pork
- 2 tsp. peeled and minced fresh ginger
- 1 green onion (scallion), finely chopped
- 1 tbsp. soy sauce
- 1 tsp. freshy ground black pepper
- 1 package round wonton wrappers
- 1 large egg, beaten
- 4 cups (1 liter) chicken stock
- one 1-in piece fresh ginger, peeled
- one 1-in piece lemon-grass
- 2 tbsp fish sauce
- 1/4 lb (125 g) watercress washed with woody stems removed

In a large pot combine chicken stock, ginger, lemon grass and patis; simmer over medium-low heat for 15-20 minutes.

Remove from heat and discard the ginger and lemon grass. Add 12 to 15 wontons to the soup and simmer until wontons are cooked, about 5-6 minutes. Serve warm and grab a spoon.
