RELLENONG MANOK

Ingredients:

  1. 1 whole chicken, deboned
  2. 2 tablespoons soy sauce
  3. 1 ½ tablespoons sugar
  4. 2 tablespoons calamansi juice
  5. ½ kilo ground pork
  6. 1 cup ham, diced
  7. ½ cup bacon, diced
  8. 10 pieces Vienna sausage, sliced
  9. ¼ cup carrots, minced
  10. ¼ cup sweet green peas
  11. ¼ cup raisins
  12. ¼ cup pickle relish
  13. ½ cup grated cheddar cheese
  14. ¼ cup breadcrumbs
  15. 6 whole eggs, beaten
  16. Salt, taste
  17. Pepper, taste
  18. 2 tablespoons liquid seasoning
  19. 1 tablespoon sugar
  20. ½ cup butter

 

Cooking Directions:

In a large bowl, marinate chicken in soy sauce, calamansi and sugar for at least 30 minutes.

Preheat oven at 350 degrees F.

In a medium bowl, mix all stuffing ingredients well. Stuff all parts of your chicken. Sew the opening and truss the chicken. Wrap entire chicken in aluminum foil.

Bake chicken until cooked, about an hour. Open the foil and rub chicken with butter and put back in oven until color turns golden brown.
