In a container, combine all ingredients, except for the pork. Sprinkle tocino spice onto the pork distributing it evenly. Put pork into container to cure for three days.
Ingredients:
- 2 lbs pork pigue (ham shoulder)
- 2 tablespoons ansie wine
- 2 tablespoons annatto water
- 2 tablespoons salt
- cooking oil
- 4 tablespoons sugar
- 1/8 teaspoon tocino spice

In a skillet or wok, add a little water and pork. Fry until it’s cooked.
