In a medium bowl, mix the galapong, sugar and annatto seed. Add in coconut milk and beat until smooth.
Ingredients:
- 6 cups of Galapong Bigas from rice
- 1 ½ tablespoons baking powder
- 1 ¾ cups refined sugar
- 1 teaspoon annatto seed
- 1 ½ cups coconut milk
- salted red eggs
- cheese of your choice, grated
- banana leaves

In a muffin pan, lined with banana leaves, fill with mixture. Steam for 25 to 35 minutes. Just before their finished cooking, top with cheese and egg. Complete cooking.
