PANCIT BIHON

Ingredients:

  1. 2 cups of chicken broth or 2 chicken bouillon cubes dissolved in 2 cups of water
  2. ¼ cabbage, sliced into strips
  3. 8oz pack pancit bihon noodles
  4. 1 onion, peeled and sliced
  5. 1/3 cups scallions, cut into pieces
  6. 1 cooked chicken breast, shredded
  7. 1 carrot, sliced into strips
  8. 2 tablespoons of cooking oil
  9. add pepper for taste
  10. 3 tablespoons soy sauce
  11. 3 cloves of garlic, crushed and minced
  12. add salt for taste
  13. 5 pieces of calamansi or lemon, sliced
  14. ¾ cup diced celery

 

Cooking Directions:

In a large bowl, soak the noodles in water to soften. 10 minutes.

In a large skillet or wok, heat oil and sauté garlic and onions. When you smell the garlic add the chicken broth, chicken and vegetables. Then mix in your softened noodles. Add soy sauce. Cook until noodles are soft, about 5 minutes. Salt and pepper to taste.

Serve in a bowl and top with calamansi or a lemon squeeze.
