INIHAW NA TILAPIA

INIHAW NA TILAPIA

Ingredients:

  1. banana leaves or foil for wrapping fish
  2. 2 tablespoons minced garlic
  3. 1 tablespoon minced ginger (optional)
  4. 1/2 cup chopped tomatoes
  5. 1/2 cup chopped onions
  6. 1 fresh tilapia, trimmed and cleaned (gutted and scaled)
  7. salt or fish sauce and freshly ground black pepper to taste

Cooking Directions:

1

In a small bowl, combine garlic, onions, ginger, tomatoes, patis and pepper. Mix while pressing on tomatoes to bring out their juice. Set aside.

2

Cut some slits in the fish, down to the bone, either with one long cut parallel with the backbone or with several slashes perpendicular with the backbone.

3

Insert the tomato mixture into the cavity of the fish through the cuts.

4

Wrap the entire fish with banana leaves. Cook over grill for 20 minutes. When the smell gets pungent, it’s ready to eat. Serve hot.

5

If baking in oven: preheat to 400˚F and bake on a baking sheet for 20 minutes. Serve hot too!
