In a small bowl, combine garlic, onions, ginger, tomatoes, patis and pepper. Mix while pressing on tomatoes to bring out their juice. Set aside.
Ingredients:
- banana leaves or foil for wrapping fish
- 2 tablespoons minced garlic
- 1 tablespoon minced ginger (optional)
- 1/2 cup chopped tomatoes
- 1/2 cup chopped onions
- 1 fresh tilapia, trimmed and cleaned (gutted and scaled)
- salt or fish sauce and freshly ground black pepper to taste

Cut some slits in the fish, down to the bone, either with one long cut parallel with the backbone or with several slashes perpendicular with the backbone.

Insert the tomato mixture into the cavity of the fish through the cuts.

Wrap the entire fish with banana leaves. Cook over grill for 20 minutes. When the smell gets pungent, it’s ready to eat. Serve hot.

If baking in oven: preheat to 400˚F and bake on a baking sheet for 20 minutes. Serve hot too!
