In a large skillet or wok, sauté your garlic, onion, ginger and chili. The smell will rise, that’s good. Then add your shrimp and coconut milk. Let simmer. Add your kalabasa. Let simmer. Wait for the coconut milk to lessen and the cream to form. Now add your sitaw. Finally add your patis and let simmer until it’s as thick as you like it.
