BICOL EXPRESS

Ingredients:

  1. 3 cups long chili or jalapeno peppers
  2. 1 cup Baguio beans
  3. Salt to taste
  4. 1/2 pound pork, thinly sliced
  5. 1 head of garlic, minced
  6. 1 onion, minced
  7. 1 cup coconut milk
  8. 2 tablespoons of cooking oil
  9. 1 cup coconut cream

 

Cooking Directions:

In a small bowl, soak chili peppers in water for 30 min. Rinse and strain.

In a small cooking pan, heat oil and cook sliced pork until brown. About 3-5 minutes.

In a medium pan or wok, sauté the garlic and onion and add the browned pork. Then, add the coconut milk bringing to a boil. Let simmer for 10 minutes.

After 10 minutes, add the strained chili peppers, Baguio beans and cook until dish gets dry. Then add the coconut cream and simmer until the sauce thickens.

Salt to taste.
